How to Freeze Chokeberries for the Winter

Preparations made from chokeberry for the winter have many beneficial properties. Rowan berries were used very widely by our ancestors: not only as food, but also as decoration and medicine. Today, rowan is not so popular, but preparations made from it do not lose their relevance.

Chokeberry (chokeberry) is a fruit tree with sweet and sour black berries that have a specific tart taste. Harvest occurs in September and October.

Rowan berries contain vitamins A, B, C, E. They are also rich in iron, magnesium, iodine, fluorine and other microelements. The calorie content of berries does not exceed 50 kcal per 100 g.

The beneficial properties of chokeberry for the body

Aronia berries can remain on tree branches for a long time. The best time to pick berries is late September or early October. During this period, they are already quite mature and are perfect for harvesting. Chokeberry preparations will diversify the winter table and help defeat various diseases. What can be prepared from chokeberry berries?

Preparations from chokeberry berries in natural form

  1. The easiest and most popular type of preparation is freezing. You just need to pick the berries, rinse them in running water and freeze them in the refrigerator. You should not freeze one large portion of berries. It is better to divide them into small parts, then you will not have to deal with secondary freezing.
  2. You can keep the berries fresh if you place them in a cool, dry place. Collect the berries along with the branches and hang them in the basement or attic, where the sun's rays do not reach. The storage temperature for this preparation option is 5°C.
  3. Another option is to dry chokeberry berries. Simply spread the fruits in an even layer on a baking sheet or tray and leave in the sun until completely dry. You must remember to stir the berries. The oven is not suitable for drying - the beneficial microelements of the chokeberry are lost.

Chokeberry, can it be frozen for the winter?

Chokeberry also freezes well, like all other fruits and berries. Moreover, it is a very healthy berry, and given that its beneficial properties are not lost when frozen, if possible, it is always better to freeze chokeberry for future use. The process is simple - first we collect the berries, separate them from the branches, sort them and wash them. then we dry the berries and place them on a baking sheet or any other flat surface so that the berries touch as little as possible. Place the pan in the freezer and turn on the fast freeze mode. You can also freeze it in a regular refrigerator, but quick freezing prevents large ice crystals from forming inside the berries and therefore it will retain its shape better. Then we take out a baking sheet, pour the berries into containers or just bags and put them in storage.

Of course you can, like any other berries, their skin is thick and when defrosted it does not turn sour, but just like fresh. I always freeze it, then in winter it adds color and taste to compotes, otherwise it’s not very tasty, but in compotes it’s irreplaceable, for example, with dried apples the compote turns out delicious and beautiful.

Aronia compote

Chokeberry compote is well suited as a drink in winter. It is tasty and very healthy.

Making compote from chokeberry is not difficult. Rowan berries need to be peeled, washed and filled into pre-sterilized jars by a third. Sugar and water are taken in a 1:2 ratio. The sugar syrup is boiled for 10-15 minutes, then poured into jars with berries.

You should only seal jars with sterile lids. After twisting, turn the jars upside down, cover with a blanket and leave overnight. The next morning, check the lids for tightness and transfer the jars to a cool storage place.

You can boil the syrup together with the berries, but then many of the beneficial properties and vitamins contained in the chokeberry are lost. You can also add various fruits: apples, oranges, lemons, cherries.

How to preserve chokeberries with sugar without cooking

Chokeberry (also called “aronia chokeberry”) is a plant that has beautiful and shiny fruits, distinguished by a pleasant, tart, sour-sweet taste. Berries are rich in vitamins C, P, E, PP and B vitamins.

In addition, chokeberry fruits also contain carotene and a number of microelements, the main of which are iron, boron, iodine compounds, copper, manganese and molybdenum. Thanks to such a rich composition, chokeberry berries are widely used in folk medicine, and given that not everyone likes chokeberry fresh, the existence of a huge number of recipes for its preparation and storage is understandable. Let's look at the most popular of them.

If you want to get a healthy chokeberry preparation without heat treatment, then perhaps the best option would be berries ground with sugar.

This composition will retain all the beneficial compounds and vitamins of the plant, which will be a real boon during cold epidemics or when vitamin deficiency occurs. All you need in this case is one kilogram of berries and 500-800 grams of sugar.

The difference in the amount of sugar depends on individual preferences, that is, if you prefer sweeter fruits, then it is better to take 800 grams, but if you like the slight natural sourness of chokeberries, then 500 grams will be enough.

Before harvesting, sort the berries well, separating them from the branches, and rinse the fruits under running water.

After lightly drying the rowan, take a blender and grind it, adding sugar. Instead of a blender, you can use a regular meat grinder, passing the berries through it twice. At the end you will get a homogeneous berry mixture, which must be given time to brew.

The finished jars are left to brew so that the fruits release even more juice (during this time the sugar will completely dissolve), and then the closed containers are put in a cool and dark place (you can use a regular refrigerator).

So, we found out how you can store chokeberry so that you have a full supply of vitamins for the winter, and it’s up to you to decide which method to choose.

If it is more convenient to use dried fruits, then you can use the oven, and if you want to preserve their fresh form (including taste and smell) as much as possible, then it is better to give preference to the freezing method or grind the berries with sugar.

  • dry;
  • wither;
  • soak in sugar syrup or alcohol solution;
  • screw into jars;
  • preserve in sugar syrup or in its own juice;
  • make jam, marmalade or marmalade.

Dried rowan

An interesting fact is that fruits prepared in this way are the basis for fashionable pomegranate flour. Both red and black berries are dried; from both types you can prepare this useful and unusual product.

Dried rowan is prepared as follows:

  • the fruits are washed,
  • dry on a towel;
  • spread in one layer on a baking sheet covered with baking paper;
  • preheat the oven to 70°C;
  • During the drying process, the berries must be constantly stirred and the oven door kept slightly open to allow moisture to escape.

The rowan will be ready when the fruits stop sticking together when squeezed in the palm of your hand. The drying process can also be carried out in a dry, well-ventilated place - in the attic or on the balcony, or in a special food dryer.

You can also dry individual clusters; each branch is placed on baking paper and prepared in the manner described above. To determine the degree of readiness of chokeberry fruits, you need to wait until they become a bright wine color. Under natural conditions, in a dry room, this process can take up to three weeks.

Dried berries should be stored in a dry, well-ventilated place at a temperature not exceeding 20°C. The best container for storing them is:

  • linen bag;
  • glass jar with lid;
  • ceramic container;
  • porcelain container with lid;
  • sealed container;
  • vacuum bags.

The fruits of red or chokeberry retain their beneficial properties for up to two years. As soon as they acquire a coating in the form of rust, they will become unsuitable for food.

It is better to make flour from them immediately before use; in ground form they are not stored for a long time and quickly lose their taste, aroma and nutritional qualities.

Dried rowan

Dried berries retain all their beneficial properties, but the technology for preparing them is different. This preparation is done as follows:

  • prepared and washed berries are poured with boiling water for 3-4 minutes;
  • boiling water is drained, poured with cold water and soaked for 12 hours, changing the water 3-4 times;
  • the dried fruits are covered with sugar (2 cups per 1 kilogram of rowan) and kept for about a day at room temperature;
  • drain the juice, which can be closed in jars;
  • the berries are covered again with 2 cups of sugar;
  • after a day, the juice is drained, they are again filled with hot sugar syrup;
  • Without bringing to a boil, cook, stirring continuously, for exactly 7 minutes.

We invite you to familiarize yourself with: Ammophos fertilizer - composition, application rates, production

The syrup is then strained and can be sealed in jars as a topping for ice cream or other desserts. Now the fruits, after the syrup has drained from them, can be dried, for this:

  • Place the rowan berries on a baking sheet lined with baking paper;
  • turn on the oven at 70°C;
  • dry for 30 minutes, then cool and dry again for 30 minutes.

Afterwards, remove the baking sheet from the oven and cool the berries at room temperature. Then put them in a sieve and leave them in a dry and warm place to dry at a temperature of 30°C.

Store dried, ready-made rowan berries in a glass container, covered, at a temperature no higher than room temperature, for example, in a pantry or kitchen cabinet.

Blank options

Recipes for winter from chokeberry are in many ways similar to preparations from other seasonal berries and fruits. Chokeberry is very similar to its famous relative - red rowan. These berries differ little in shape, except that black rowan is slightly smaller in size than red one.

It is best to harvest chokeberry in the fall, after the first frost hits. After a slight freezing, the fruits lose most of their astringency and become sweeter. You can recycle them for the winter in the following ways:

  • dry;
  • grind with sugar;
  • to freeze;
  • make jam or jam;
  • prepare marshmallow;
  • cook compote or jelly;
  • make wine or liqueur;
  • preserve juice;
  • make candied fruits;
  • prepare sauce for meat dishes.

Only those berries that have ripened well are taken for processing. An unripe product will be significantly inferior in taste to a ripe one, and preparations made from it will turn out to be too tart and may taste bitter.

If you had to pick the berries before frost or they were purchased at the market and turned out to be bitter, you can put them in the freezer for several days - this way some of the starch in the berries is converted into sugar, and their taste becomes more pleasant.

For freezing, preparing compotes and liqueurs, take the berries along with the stalks; in other cases, the berries must be separated from the stems.

Drying berries

Drying berries is one of the simplest types of winter preparations, especially if the household has an electric dryer for fruits and vegetables. Typically, such household appliances already have a ventilation function, and the heating temperature is optimally selected.

If there is no such unit in the household, you can resort to drying in the open air or in an electric oven with the door open. The raw materials are pre-washed, sorted, removing deformed and spoiled fruits, then thrown onto a sieve to allow excess water to drain.

How to keep chokeberries fresh for the winter without cooking

The berries must be washed very carefully so as not to damage their outer shell.

The washed berries are placed on special drying racks, covered with gauze and dried in a dry, ventilated place. It is important that the drying area is not too cool; high humidity is also unacceptable.

In this case, you need to set the heating temperature within 40-50 °C and shake the berries every 6-8 hours to ensure uniform evaporation of moisture.

The readiness of the raw materials is checked by squeezing the berries: a product suitable for storage should not release moisture. Dried berries are perfect for cooking winter compotes.

Freezing of raw materials

Housewives often find an interesting chokeberry recipe that they really want to try, but they discover that the berries are not on hand. The chokeberry harvest season is not very long, so you can buy it fresh only 2-3 weeks a year. The way out of this situation is to freeze the berries.

They can be stored in the freezer for up to six months, and this storage method will allow you to almost always have a useful product, as they say, at hand. The benefits of frozen berries are as good as fresh ones, and the taste only gets better after freezing.

From defrosted fruits you can cook everything that you can from fresh ones.

A good housewife will always have a place in her pantry for chokeberry preparations. Chokeberry, also known as chokeberry, is equally good in preserves, jams, compotes, you can make juice, pastille from it, you can pickle it, dry it, and freeze it.

Jam

What is most often made from chokeberry for the winter{q} Of course, jam! Even the youngest housewife can easily master making rowan jam; I will give you a recipe that is simple and easy to follow.

We will need:

  • 1 kg of rowan berries;
  • 1.5 kg of sugar per 600 ml of water.

Preparation

  1. Let's prepare a pan for blanching, a pan with cold water, a colander or mesh for blanching, a bowl for making jam, a towel, and oven mitts.
  2. Separate the rowan from the branches, sort through it, removing unsuitable berries, rinse and drain in a colander. While it is draining, boil water in a saucepan. Dip the rowan into boiling water for 5-10 minutes, then immediately into cold water with pieces of ice, using a colander or metal mesh. Place the rowan berries prepared in this way into a bowl or pan for cooking.
  3. Let's prepare sugar syrup: dissolve 1.5 kg of sugar in 600 ml of hot water, bring to a boil, let the syrup boil for several minutes. Pour hot syrup over the rowan berries and leave to soak for 6-8 hours.
  4. How to cook berries to preserve the maximum beneficial properties{q} We cook the jam by boiling it several times, i.e. bring to the boiling point, simmer for several minutes, stirring, then remove the jam from the heat for 15-20 minutes. We repeat this operation 4-5 times.
  5. Let's first prepare the jars for filling the jam: rinse thoroughly in hot water with soda, rinse, and dry. Sterilize the jars in the oven.
  6. To bottle the jam, take still hot jars and pack the boiling jam into them, seal them hermetically and cool them.

Chokeberry jam

Jam is one of the most common preparations for the winter. Before making chokeberry jam, the berries must be thermally treated. Place the berries in boiling water for 3-5 minutes, and then in cold water. Let cool. After this you can cook.

Rowan jam can be prepared in different ways, even without sugar. This recipe will be more complicated than usual, but several times healthier!

To make delicious chokeberry jam, you will need a large container that will fit the jars. It is better to put a rag at the bottom of this container to prevent burning. Bring the water in the container to a boil, place jars filled to the brim with berries. Boiling water should not get into the jars, but only reach the neck. The cooking process lasts approximately 30-40 minutes. After this, we roll up the jars with sterile lids. You can also improvise and add different fruits and even vegetables.

You can make jam the traditional way - with sugar. To do this you will need berries, sugar, water (in a 1:1 ratio). All ingredients are mixed and simmered over low heat for 35-45 minutes. Pour the aromatic jam into sterile jars and roll up the lids (not metal).

Chokeberry jam

It is better not to use a multicooker - the process may take a long time. You can simply grind the chokeberry berries, add a double portion of sugar and pour them raw into jars. Sprinkle an extra layer of sugar on top to prevent mold. This jam has a shorter shelf life, but all the vitamins are preserved in it.

Chokeberry is an amazing berry and not loved by many. When properly prepared, it can turn into a delicious dessert or drink. You can use the berries to make jam, pastille or marmalade, wine or compote.

One of the most valuable berries in household plots is chokeberry. The tart and unsweetened taste makes chokeberry less popular compared to, for example, strawberries, cherries or sea buckthorn. However, the beneficial properties of black rowan are worth preparing them for the winter.

How to preserve chokeberry without cooking{q} This question often arises when you don’t want to cook compote or jam. There are several available ways to preserve vitamins in chokeberry fruits.

At first glance, each of these methods seems simple. Still, it doesn’t hurt to brush up on the technology of each process. After all, it depends on this how fully the berries will retain their quality and composition.

We suggest you familiarize yourself with: Herbal balm

You can preserve black rowan for the winter without freezing or cooking. But you shouldn’t completely ignore freezing or using sugar - these methods are good in their own way.

In order to dry the collected chokeberry fruits, you can use a special drying cabinet, oven, or allow the berries to dry naturally in the open air. According to the instructions for preparing fruit and berry raw materials, they are not washed before drying, as this can cause damage to the plant raw materials during the dehydration process itself. Wash dry fruits immediately before use.

This is the longest method at home, which does not always end in success. If you choose it, then arrange the berries in a thin layer on trays or wooden boards. You can hang the tassels with fruits on a rope and hang them to dry.

Only undamaged specimens should be selected, otherwise there is a risk of mold appearing during drying. Trays or racks with chokeberries must be placed in a ventilated place where direct rays of the sun do not reach.

Oven drying

This is a more popular and effective method. To do this, turn the oven on to the minimum temperature (about 40 degrees) and place baking sheets with chokeberry berries scattered in one row in it.

After 30-40 minutes, when the fruits have dried a little, the temperature is raised to 60 degrees (or the oven door is closed). After drying, the chokeberry should retain its natural color. If the berries turn red or brown, this means that you have overdried the raw materials.

Drying in a thermostat

It is very convenient, but it is clear that for this you need the device itself. If you have the opportunity to take advantage of it, then consider it “in the bag.” All you have to do is set the desired temperature - 60 degrees and wait for the raw material to dry completely.

It is best to store dried chokeberries in winter in fabric or paper bags. The maximum shelf life is 2 years.

Well-dried black rowan berries lose their excessive astringency and even become a little sweet and with a gentle sourness. They can be safely used in winter for preparing compote or tea with rose hips.

Chokeberry liqueur

The recipe for the alcoholic drink is simple. Pour chokeberries and sugar into a jar (3 liters). The total amount of berries and sugar should be 2/3 of the jar or more. Pour this mixture with vodka, leaving 2 cm to the edge. You will need about 1.5 liters of alcohol.

After this, seal the liqueur with a simple lid or parchment and place it in a dark, dry place for 2 months. After the time has passed, pour the finished liqueur into bottles and seal. The liqueur prepared in this way is stored in the basement or other suitable place.

To ensure that the berries do not go to waste after consuming the liqueur, they can be used to bake a cake. A delicious and savory cake will decorate and diversify your table.

Shock freezing of chokeberry for the winter

Blast freezing provides all the same benefits, but in addition, the ideal shape of the berries is preserved, so they can be used to decorate cakes, pies, casseroles and other baked goods.

The essence of shock freezing is that the berries are frozen at a temperature of at least - 18 ° C very quickly, literally in 1.5-2 hours. As a result, the sugar contained in chokeberry fruits does not have time to turn into starch and the berries completely retain their original structure.

At home, the following technology is used. Washed and well-dried chokeberry berries are laid out strictly in one layer on a flat tray or baking sheet and placed in the quick-freezing compartment.

After a few hours, the frozen fruits are taken out and poured into conveniently sized plastic bags for storage. It is most advisable to use bags with a zip fastener. They are filled with frozen berries, as much air as possible is released from them and sealed tightly. After which they are placed in a general compartment for long-term storage.

The berries are stored in bulk, do not freeze into one continuous mass and are therefore very convenient for further consumption.
