What temperature should be in a refrigerator or freezer for storing food is regulated by GOST 26678-85 and SanPiN 2.3.2.1324-03. Food storage rules developed for stores and catering are relevant in the home. Normal refrigerator temperatures ensure maximum shelf life for food.

Average temperature inside the chamber: from +2 to +5. This standard is suitable for storing most products. The optimal temperature in the freezer is from −18 to −20.

Maintain the ideal temperature to extend the life of your refrigerator. An incorrect mode setting is indicated by:

The distribution of cold is non-uniform within one chamber. The shelf closest to the freezer has a lower temperature than the shelf furthest from the freezer. The door is considered a warm place. The more often the door is opened, the higher the temperature on the shelves.

If the model is single-chamber, the freezer does not have a separate door. Therefore, the shelf closest to it gets very cold.

Temperatures at the top may be 2-5 degrees below average. On one shelf the temperature fluctuates within a degree. The temperature at the back wall is lower than at the front.

In the freezer

The freezer is the coldest zone in the refrigerator. For most models, the freezer temperature can be set from minus 14 to minus 25 degrees. The optimal temperature regime is −18 ... −20 degrees.

Follow the rules for loading your refrigerator to ensure that your food lasts as long as possible. To set the temperature correctly, consider what foods are in your freezer:

  1. If you use the freezer to store semi-finished products and do not fill the drawers more than halfway, you need to set the minimum temperature: the nominal value will be −14 °C.
  2. If you keep fresh meat in the freezer, which occupies 50% of the volume of the boxes, lower the temperature to −20 °C ... −24 °C. But it is not recommended to select the maximum value.


SanPiN standards

Modern refrigerators have a quick freeze function. When this mode is activated, the temperature in the refrigerator freezer drops to −24 ... −30 degrees for several hours. The exact temperature and duration of the low-temperature mode are indicated in the model data sheet.

Refrigerator zones and temperatures

Let's take a closer look at the zones of the refrigerator chamber, and how many degrees should be in each of them. This is important, since food storage must be done correctly to avoid premature spoilage.

As already mentioned, each tier has its own degrees, which allows you to place food in one chamber, but in accordance with the requirements of storage conditions.

Freshness zone

Such a zone is not provided in all refrigerators. However, most manufacturers still include it in the manufacture of refrigerators. How many degrees should the refrigerator on this shelf be?

Here it is always no less than 0 degrees, but no more than +1. Thus, pathogenic microorganisms that lead to product spoilage almost completely stop developing. Refrigerator shelves

The lowest shelf, the one under which vegetable boxes are most often located. Here the standard recommended temperature is +8. This tier and compartments are good for storing vegetables, fruits, salted and fermented foods.

When the door opens, cold or warm air from the room outside enters the chambers. The average refrigerator temperature varies depending on how many degrees it is in the house or garage.

Let us remind you that the temperature in the refrigerator and freezer should reach (°C):

  • plus 2−5 in a common chamber;
  • plus 0−1 in the freshness zone;
  • plus 5−8 in the vegetable department;
  • minus 18−20 in the freezer.

Temperature violations

Problems with the temperature regime of the refrigerator are immediately noticeable. They are characterized by the following features:

  • food freezes and frost forms on its surface;
  • outwardly, the products look spoiled, although their shelf life has not yet expired;
  • food in the refrigerator seems too warm;
  • condensation forms on the surfaces of the refrigerating chamber;
  • the back wall of the refrigerator freezes and becomes covered with ice;
  • The ice in the freezer melts periodically.

High temperature shifts affect not only food, but also electronics. If the operating rules are not followed, the equipment quickly fails.

How the No Frost system works

The No Frost Dual Cooling operating mode (no frost, cooling frost) allows defrosting 1-2 times a year. The refrigerator mechanism consists of 2 parts, independent operating circuits:

  • the first is for the freezer;

In order not to lose the beneficial properties of food during storage, it is necessary to provide any product with an optimal temperature regime.
The storage temperature of the most commonly consumed products (dairy, fresh vegetables, sausages) ranges from 2 to 6 ºC.

Food supplies are placed in the freezer for long-term storage. The normal temperature is -18 ºС, and if food needs to be quickly frozen, then -25 ºС.

The temperature in the refrigerator is controlled using a regulator. Depending on the product model, regulators are mechanical or electronic.

Manufacturers also produce equipment equipped with two compressors with separate control of the mode in the freezer and in the cooling chamber.

Units on which electronic temperature control devices are installed allow you to regulate the operating mode of the product and temperature with an accuracy of 0.1 ºС.

The control buttons and display are located on the outside of the refrigerator door. The display shows the actual temperature inside the device.

In such household appliances, it is not possible to set the temperature inside using an electronic display, so the position of the regulator knob is determined experimentally. Manufacturers recommend setting the handle to the middle position, believing that the temperature inside will be the most optimal.

But the cooling mode is affected by the load on the appliance with products and the ambient temperature. Therefore, if this is not enough for normal cooling, the knob can be turned 1-2 notches to the right. True, this will increase the operating time of the compressor.

In refrigerators with separate control modes, two thermostats are installed for the refrigerator and freezer compartments. Setting the required temperature in the chambers can be done using the regulator knob or by pressing the regulator button.

The freezer has a super cooling mode, in which the temperature drops to -25 ºС, and then after a certain period of time returns to the optimal -14 ºС.

It is often located in the lower section, but this is not necessary. The temperature here ranges from 6 to 24 degrees below zero, and the owner can control the level within these parameters using a special regulator. It is often equipped with asterisks, each of which means 6 degrees. That is, two stars will give a result of 12˚C below zero, and three – 18, etc.

The principles of adjustment are based on expediency: how much space is occupied on an ongoing basis. For rare freezing of small quantities of food, -14 degrees is sufficient. If there is a large turnover, and half or more of the chamber is filled, then you can safely set the maximum values ​​with a minus sign.

If we talk about what the temperature should be if “quick freezing” is needed, then it is from -24 to -30. Under such conditions, any product will be completely frozen in a few hours. This helps to achieve preservation of their freshness, aroma and vitamins and minerals after proper defrosting for consumption.

The refrigerator compartment is designed for shorter storage of food products; only because they belong to different types, it is necessary to correctly set the temperature. This means that in some sections you will need a degree of about zero, while in others it can reach 6. These modes are approximately fixed at certain shelves (levels) in the chamber, therefore each of them should belong to different food groups.

Regardless of the unit, you always need to know what the temperature is in the refrigerator, because this is largely related to people’s health. Low levels can spoil food and deprive it of its former amount of vitamins, minerals and other beneficial substances. Inflated numbers mean poor storage quality, so products will expire much faster.

This table is of a general recommendation nature, and for each specific product the manufacturer may set its own individual shelf life and storage temperature conditions. Also, some fruits, especially tropical ones, do not tolerate low temperatures at all. Whether the factory packaging of a food product is opened or not is of great importance for shelf life. SanPiN 2.3.2.1324-03 regulates sanitary requirements for refrigeration units in enterprises. According to the document, to control temperature and humidity conditions, all refrigeration units must be equipped with thermometers (not mercury) and psychrometers.

Individual refrigerators or compartments must be labeled according to the category of products that are stored in them.

The quantity of products to be stored cannot be greater than what the operating refrigeration equipment can accommodate.

Simultaneous storage of raw products and semi-finished products is unacceptable (frozen or chilled).

Switches can be mechanical, where you need to turn a knob or move a slider. In modern models, electronic adjustment systems predominate. In them you need to press the buttons on the control panel. In some models, all parameters are displayed on the display.

  • Closed compartments are specially designed for storing fresh vegetables and fruits. The normal temperature in such plastic boxes is from 5 to 10°. However, their main feature is the special microclimate that is created inside after placing greenery there. Thanks to this, it remains in its original form longer, does not fade or deteriorate.

The temperature regime described above is maintained provided that the refrigerator is used regularly, for example, if it is opened 1-2 times an hour. If it does not open during the day, the temperature inside the refrigerator compartment is equalized, and its difference is no more than 1-2 degrees.

Modern refrigerators are equipped with a built-in thermometer that shows the temperature inside the chambers. The data is displayed on a special LCD display. However, in older models there is no such possibility, and to find out how many degrees are in the freezer, you will have to use a regular outdoor thermometer.

The need to measure the cooling temperature arises in the following situations:

  • modern;
  • equipped with control thermometers;
  • be subject to annual checks for compliance with passport characteristics;
  • their number must be sufficient to comply with the rules of commodity neighborhood in the required volume.

According to SanPin, raw and prepared foods at school must be stored in separate refrigerators marked with appropriate markings. Failed refrigeration equipment should be restored as quickly as possible, and for the time required for repairs, changes should be made to the daily menu so as to fully comply with sanitary requirements when preparing dishes.
