In the Urals it is respectfully called “horseradish snack”, with the emphasis on the first syllable. According to different recipes, bell peppers, apples and even plums are also added to the mixture, but spicy vegetables and seasonings remain unchanged. In the Soviet years, each housewife had her own recipe for how to make a delicious horloder from tomatoes with garlic for the winter; they used both ripe and unripe tomatoes, flavored with black and hot pepper to taste. How to make the dish:

  1. Rinse all vegetables.
  2. Remove apple cores, seeds, and any other excess parts from the pepper.
  3. Cut the tomatoes into pieces.
  4. Process the vegetables with a blender or meat grinder and place them in a deep saucepan.
  5. Add vinegar and oil, salt and pepper. Mix well.
  6. Place the dishes on the stove and cook the mixture with garlic and red pepper over low heat for about two hours.
  7. Chop the greens as finely as possible and add them to the vegetable mixture 10 minutes before they are ready.
  8. Pour the hot sauce into sterile containers, roll up and wait to cool. Then put it away for storage.

Gorloder without cooking

It’s easier to make a horloger from tomatoes without cooking; special care is needed when working with horseradish. It heavily clogs the grinder grate, so it needs to be ground last on the list. And salted water will help get rid of the smell of garlic; you need to wash your hands thoroughly in it. These are the main ingredients, the more of them, the longer the mixture will stay fresh.

  • ground red pepper – 0.5 teaspoon;
  • sugar – 1 teaspoon;
  • horseradish root – 80 g;
  • garlic – 60 g;

Recipe: Gorloder - for the winter

All you need is: ripe tomatoes, horseradish roots, garlic and a little salt.

Peel the garlic and horseradish. Wash everything, including the tomatoes, thoroughly and dry slightly. For tomatoes, we remove everything unnecessary (the place where the stalk is attached and spoiled places, if any).

Now we pass everything through a meat grinder. Personally, I skip the tomatoes along with their skins and seeds, I don’t put in a special attachment that makes pure tomato juice, but, if you wish, you can make it without seeds and peels. Either way, the end result will be the same.

Now you need to salt the horloder to taste. Some people also add sugar, but I don’t use any sweetener in this recipe.

I have a meat grinder with fairly large holes in the grate, so I get small pieces of garlic and horseradish.

The finished horloger needs to be poured into sterile jars.

For long-term storage, for the winter, these jars must be hermetically sealed with metal lids for preservation. Or you can cover it with a regular plastic lid and store it in the refrigerator, where the garlorder can easily stand for a month or more.

From the specified amount of ingredients, approximately 1 liter of finished garlorder is obtained.

I don’t cook it very spicy, but everyone can “adjust” the spiciness and taste for themselves by adding more garlic, horseradish and salt.

The peculiarity and difference of this snack from others is that it has a specific, refined taste and pungency of horseradish. Plus, the horloger is also useful, since the absence of heat treatment allows you to preserve all the properties and vitamins of tomatoes and other components. And the medicinal, anti-inflammatory properties of horseradish and garlic are added, thanks to which colds and other misfortunes will be avoided if you often eat gorloder along with other, familiar dishes.

One of the most famous recipes is “Ogonyok”, this is a garlor with hot peppers and tomatoes, add at least 1 tbsp of vinegar, then the preparation will be stored without problems even for several years. It is recommended to taste when adding spicy ingredients, but it is important to remember that the full spiciness will still be revealed in a few days.

If you don’t like the mixture with garlic, you can make a tomato and horseradish horloger, it will add the desired spiciness. But such a preparation is stored for only a couple of months in the cold, which also needs to be taken into account. You can use both a meat grinder and a blender, but experienced housewives note that the second option is less suitable because it produces a lot of unnecessary foam.

Is it possible to store Gorloder in plastic bottles?


Some housewives prefer to store snacks in plastic bottles. Is this storage method good?

In general, it is not advisable to reuse plastic bottles, but this rule is usually ignored. In theory, it’s possible to pour a dehydrator into bottles, although it’s not entirely convenient. If you want to place it in such a container, take new bottles made of thick plastic and fill it with a workpiece that has not been boiled.

I would like to note that the shelf life of a horloger in a bottle differs significantly from that stored in a jar. The canned one lasts longer.

Thus, it is indeed possible to keep a gorloder in a bottle, but only if you eat it within a couple of weeks. Such dishes should be kept in the refrigerator, otherwise the product will ferment. And, of course, under no circumstances should you buy such a preparation in a store or market.
