To preserve all the qualities and appearance of mushrooms, it is important to process them correctly. How to freeze honey mushrooms for the winter?
As already mentioned, honey mushrooms are considered the best type of mushrooms for freezing. They are dense in consistency, therefore, they will not lose their shape after defrosting. Another advantage is that they absorb little moisture.
Only whole mushrooms, without rotten parts, are suitable for freezing. In terms of size, it is best to choose medium. Fresh honey mushrooms purchased in the store do not need to be washed in water before freezing.
For collected mushrooms in the forest, there are several rules:
- Before collecting them, you need to carefully rake the foliage with your hands, and only then start cutting off a few mushrooms at a time. Remember that honey mushrooms grow in families.
- Save time on processing at home. After cutting, immediately clean off all contaminants and place them in a basket with the cap down.
- It is important to pay attention to the size. They should be small - medium. Large honey mushrooms are difficult to freeze.
Mushrooms can be stored frozen for no more than 6 months. Otherwise, the taste and aroma of ready-made honey mushrooms may not be noticeable.
The process of processing and preparing honey mushrooms is labor-intensive:
- First of all, we sort through and remove the spoiled and wormy ones.
- Mushrooms must be whole. We sort by size for more convenient and quick freezing.
- Small ones are used whole, and large ones are cut. It is for this reason that it is important that the honey mushrooms are of the same average size.
- Place in a colander and rinse under running water. Leave until the water has completely drained.
Subject to deep freezing, mushrooms do not change their appearance. As a rule, they can be added to stews, made into a roast, or cooked into a delicious, aromatic soup, etc. They are prepared in the same way as freshly picked ones.
You should not rinse them under water, as excess moisture during defrosting will make them watery and not so tasty.
If the mushrooms are very dirty, then in this case it is recommended to wipe them with a damp towel.
If you cannot do without rinsing under running water, then place the honey mushrooms on a dry baking sheet and wait until all the excess moisture has evaporated. Instead of a baking sheet, you can use a dry, clean towel.
Place dry mushrooms in one thin layer on a clean, dry food tray, place in the freezer and freeze. Afterwards we pour the prepared honey mushrooms into a plastic bag and put it back.

According to experienced housewives, the main thing is not to defrost the mushrooms first.
Immediately after you take them out of the freezer, start cooking them. First, it is recommended to rinse the mushrooms with water. During the frying process, water will come out of the mushrooms and they will decrease somewhat in size. As for the question of how long it takes to cook these mushrooms, everything, of course, depends on the specific dish you are preparing. In general, honey mushrooms need to be fried until they acquire a ruddy hue.
For winter preparation of fried mushrooms per kilogram of forest products, you need a glass of vegetable oil. The procurement process consists of the following stages:
- Cook the prepared mushrooms for ten minutes and allow them to drain.
- Place the mushrooms cut in half into a frying pan with heated oil and simmer under the lid for half an hour.
- Then you should open the frying pan and continue to fry the honey mushrooms until the moisture has completely evaporated; at the end of the process you should salt them.

Fans of “quiet” hunting will find it difficult to ignore small mushrooms with round caps growing in groups, and this is not surprising, because honey mushrooms are very aromatic and tasty mushrooms. They have won the hearts of not only mushroom pickers, but also chefs, as their delicate taste goes well with many products and can easily add originality to the simplest dish. But in order to ensure that the taste of the dish does not disappoint, you need to know how to properly cook and fry honey mushrooms.
Due to the fact that mushrooms are a rather difficult food for the stomach, they should not be eaten raw. Therefore, even before baking, freezing, pickling and other types of processing, it is recommended to cook them.
Before proceeding directly to cooking the product, it is necessary to sort it, remove rotten and worm-infested specimens.
Collection of honey mushrooms
If there are minor damaged areas on the fruit body, they can be cut off, leaving a healthy part. It is also recommended to trim the long leg a little, especially for the part that was immersed in the ground. To more thoroughly remove debris from the surface, the product can be carefully cleaned with a knife, removing only dirt.
Next, the mushrooms must be thoroughly rinsed under running water. If after washing all debris has not been removed, the fruiting bodies can be soaked in water with added salt. Since honey mushrooms quickly become saturated with water, they should not be kept in water for long; soaking for 20-30 minutes is enough.
General principles
Many people are interested in the question of how long honey mushrooms need to be cooked so that they do not lose their pleasant taste. If, after cooking, the product does not go through another type of processing, then it must be cooked until cooked, which takes an average of 30 minutes.
Cooking honey mushrooms
The “harvest”, washed and cleared of dirt, is immersed in salted boiling water for 5 minutes. Then the water is drained and the product is washed under running water. Next, the honey mushrooms must again be placed in clean boiling water with salt for another 25 minutes. The foam that forms during the cooking process must be skimmed off.
Before frying, it is recommended to cook the product for 20 minutes, in two stages, where the first stage takes 5 minutes, and the second - 15 minutes. Between stages, it is necessary to replace the water with clean water and rinse the honey mushrooms. In this case, there is no need to cook the mushrooms until fully cooked, since another heat treatment will follow later. Therefore, the cooking time is reduced by 10 minutes.
Before baking, the mushrooms are boiled in the same way as before frying. Since the product will be baked, it can be boiled until half cooked, so 20-25 minutes will be enough.
Before salting
Before salting, the product requires careful heat treatment, so the cooking time is delayed by 45 minutes.
Honey mushrooms are placed in boiling water with salt and boiled for 5 minutes, after which the water is drained and the product is transferred to clean and cold water. In the second water, the “harvest” is cooked for 35-40 minutes. As soon as the mushrooms settle to the bottom of the pan, they can be removed from the heat.
Before freezing
Before freezing the product, it can be boiled in two ways. The first method is no different from the method of cooking before salting, but the second method has its own characteristics.
To do this, the main ingredient is placed in a container with cold salted water and brought to a boil over medium heat. After this, it must be boiled for another 60 minutes.
If the components are not frozen, but fresh, the procedure for their heat treatment will look like this:
- We cut off all the bases of the legs from the mushrooms, remove spoiled and questionable places, and clean them from dirt. We remove the film from under the cap and remove all debris with a dry and soft brush.
- If bugs or traces of their presence are visible under the cap, the mushrooms should be thoroughly rinsed with water and cleaned with a knife. After this, rinse the components again in cold water.
- Let's start boiling the mushrooms. This should happen no later than the third day after their acquisition or collection. For processing, take an enamel basin or pan. Pour the container into water and add salt at the rate of a tablespoon per 2 liters of liquid. At the same time, place a second similar container with water and salt next to it. We heat the contents in both.
- Only when the liquid boils do we put the prepared mushrooms into it (in one of the containers). Cook them for 5 minutes, constantly skimming off the foam. Then, using a slotted spoon, transfer the product into a bowl with clean boiling water and cook it here for 15 minutes.
- If the processing is carried out before adding the product to a salad or some other ready-made dish, increase the second cooking time to 25 minutes.
- All that remains is to put the mixture in a colander and wait until the excess water drains from the mushrooms.
Fully cooked honey mushrooms should settle to the bottom of the pan. In any case, the mushrooms must be subjected to further processing, if any, as quickly as possible.
Of course, frozen honey mushrooms do not need to be cooked before frying, as most housewives do, but practice shows that such processing allows you to obtain a softer and more delicate product.
In this case, you need to act like this:
- Never defrost mushrooms. Simply put them in a suitable container and fill with cold water, which should only slightly cover the product.
- For every 1 kg of mushrooms, add a tablespoon of salt and stir gently.
- We put the container on the fire, wait until the frozen mushrooms boil and then set it for only 10 minutes. The main thing is to constantly remove the foam that appears, otherwise the taste and aroma of the component will be spoiled.
- All that remains is to carefully strain the mushroom broth into a separate container (there is no need to rush, it is better to wait a few extra minutes, but completely get rid of the liquid). The honey mushrooms are then sent for frying, and from the remaining broth you can prepare an excellent mushroom sauce.
Boiled honey mushrooms are good not only for further frying. They are used in mushroom soups, salads, pies, and cold appetizers. Even for marinating, it is best to pre-boil the product. This will preserve its unique texture and delicate aroma, which will not be overwhelmed even by introduced preservatives.
There are many ways to prepare mushrooms, the most common of which are pickling and freezing. But if marinated products cannot be added to all dishes, then frozen ones perfectly complement soups, roasts, main courses, pizza, etc.
Of all the types of mushrooms, honey mushrooms are an excellent option for storing in the freezer. They are dense enough to maintain their shape and do not absorb much moisture. For freezing, it is necessary to select whole, unspoiled medium-sized specimens. If honey mushrooms were purchased in a store, you do not need to wash them before freezing.

If you pick mushrooms in the forest, follow these rules:
- since honey mushrooms grow in families, first rake the foliage and then trim several mushrooms at once;
- so that honey mushrooms do not have to be washed from the ground, clean them immediately during collection with a knife and place them with their caps down;
- Try to collect small and medium-sized mushrooms: they are younger and easier to freeze.
The shelf life of honey mushrooms is no more than six months (or a year if deep frozen at 18 degrees). After this time, they must be used, otherwise the mushrooms will lose their taste and freshness.
Depending on what dishes you will use honey mushrooms for in the future, choose the freezing method. Before placing the mushrooms in the refrigerator, divide them into portions. When re-frozen, honey mushrooms become unsuitable for food, so you must immediately use the defrosted product.
If mushrooms are stored raw, they will better retain their shape and are suitable for any dish. When boiled, honey mushrooms lose their former appearance and are only suitable for soups or caviar. If you are going to fry mushrooms, it is better to freeze them raw.
Another way to freeze is fried honey mushrooms. They can be used as an additive to porridge, potatoes or meat.
The main rule when freezing mushrooms raw is not to wash them before putting them in the freezer. If the fruits are very dirty, you can quickly rinse them and dry them on a towel. There is no need for excess moisture when freezing, as it forms ice and takes up space in the refrigerator.
- Place prepared honey mushrooms in 1 layer on a plastic tray. It is not recommended to lay them in several layers, as the mushrooms may stick together and become deformed.
- Set the freezer to deep freeze mode.
- If there is no pallet, you can use a plastic bag, but honey mushrooms should also be laid out in 1 layer.
- When the fruits freeze, they can be placed in a plastic bag in a convenient form.
- I immediately fry it over low heat until it melts.
- You can do it right away! But do not fry, but simmer, because... will thaw and liquid will appear!
- I just throw it in warm water and rinse it - there is a lot of earth there. And then I put it in a colander and you can fry.
- If honey mushrooms were washed before freezing, then you can fry them immediately. Otherwise, you need to defrost, wash in running water, and then fry.
- I would cook them first - a little, about 10 minutes, then you can take them out with a slotted spoon and put them in a frying pan.
- I rinse with warm water until defrosted.

for the winter and what to do with them later.
The first step is to sort out the honey mushrooms, sort them by size and clear them of debris. Only fresh, young, firm, unspoiled mushrooms are suitable for freezing. Dry honey mushrooms need to be frozen, so washing them is not recommended.
Some mushrooms are blanched before freezing, but honey mushrooms are recommended to be frozen raw. Blanched honey mushrooms will have a deformed appearance after freezing, and after defrosting they will lose their shape, since they were full of moisture when frozen. If you were going to make caviar or soup from honey mushrooms, there is nothing wrong with that. But if you plan to fry them, you should not blanch honey mushrooms before freezing.
If you are afraid to freeze raw honey mushrooms, you can still boil them in salted water before freezing. But in this case, after boiling, you must drain the mushrooms in a colander, let the water drain, and then transfer the mushrooms to a towel that will absorb the remaining moisture. You can freeze honey mushrooms only after they are completely dry.
