Due to its energy value and high vitamin content, it was recommended for use in preschool and educational institutions. The freshly harvested product contains:

  • Sugar – 0.5-2.5%.
  • Ash – 0.3%.

  • Sugar (no more than 3 kg).
  • Citric acid (one teaspoon).
  • Honey (50 g). It is desirable that it has a liquid consistency.

How to store birch sap at home

Storing birch sap is not difficult, but it all depends on what kind of product is in your department. If this is birch sap purchased in a store, then it is usually sold in 3-liter jars and hermetically packaged. Its shelf life is 2 years , as are all other canned products. The production date and expiration date can be found on the product label.

It’s another matter if you are planning to collect or have already collected natural birch sap and are wondering how to store it so that it does not lose its beneficial qualities. How to store birch sap at home? To do this, you will have to work a little, but first let’s look at the beneficial qualities of this product:

  • Birch sap has an excellent tonic effect;
  • Excellent effect on the functioning of the bronchi and lungs;
  • The liquid contains a very high content of calcium and magnesium, sodium and fluorine, and many other minerals necessary for humans.

In central Russia, in just 2 weeks you can collect healthy birch sap to enjoy its healing taste.

How to store birch sap for the winter

Without freezing or canning the drink, this is almost impossible. But even in clean containers and special refrigerator conditions, long-term storage of birch sap can become dangerous, and it loses its beneficial properties.

To begin with, pathogenic microbes that live even in the cleanest refrigerator can penetrate into it, which will lead to spoilage of the juice. In addition, when it comes into contact with air, the juice begins to oxidize, and this leads to the fact that free radicals begin to release toxic substances from it. Therefore, in order to properly preserve the forest gift in the form of birch sap, it must be preserved.

In a refrigerator

To get more benefits from birch sap, you should drink it as soon as possible after collecting it. If this is not possible, you should place it in the refrigerator. The drink can be stored in the refrigerator, all nutrients will remain.

After collection, you should immediately pour the liquid into a glass container and place it in the refrigerator, then the drink will last for several more days.

At room temperature

Birch sap (if it is a natural product) can stand in the refrigerator for up to 5 days. At room temperature (if it is not possible to place it in a dark and cool room), the juice is stored for less time. On the second or maximum third day it will already become cloudy and will soon begin to ferment.

In the basement

A popular question is how many days a container of product can be stored in basements or cellars. Even placed in snow that has not yet melted near the house, in a cellar or other place without light, the drink can be stored for up to two weeks. Such long-term storage leads to loss of taste.

How to store birch sap in the cellar

If you “bury” a container of juice in the snow, in the shade of a house, or, for example, in a cold cellar, so that it is not exposed to direct sunlight, then the product can be stored for up to 2 weeks . But it is worth noting that with such a long storage, the drink will lose its original taste, it will be sweeter and at the same time bland in taste. Then the juice will sour and then ferment, and a pronounced vinegar taste will appear.

How to store birch sap without sterilization

Among other things, based on birch sap, with its ability to ferment, you can prepare natural homemade alcoholic drinks. For example, you will need 5 liters of juice, 1.5 kg. Granulated sugar and a bottle of fortified wine. It is advisable to add zest from a couple of lemons or oranges. All ingredients are mixed, kept for a day at room temperature, and then 2 months in the refrigerator.

The taste of the drink develops very well after 80-90 days, and it can be stored for up to 3 months.

Remember that natural birch sap is an excellent immunostimulant, but, despite its natural nature, it should not be consumed in unlimited quantities. It will perfectly help saturate a weakened body with vitamins, protect it from inflammatory processes and infections, and restore strength after illness.

This is the most effective way to store birch sap. To preserve all the qualities, it is important to freeze it correctly. Firstly, this must be done immediately after collection. Secondly, the process must occur quickly, in the “shock freezing” mode at very low temperatures. Make sure your freezer has enough capacity. Thirdly, the juice needs to be strained.

Freezing in a glass jar is not recommended: there is a high probability that it will simply crack due to temperature changes. Use plastic bottles and containers. Do not fill the container completely, otherwise it will burst. You can also freeze the juice in molds and then transfer the cubes to a tight bag. They are convenient to use for cosmetic procedures.

Frozen birch sap can be stored at -18 °C for up to six months, and at lower temperatures for up to one year. It cannot be re-frozen.

Preserving birch sap is not difficult. For 1 liter you will need 120-130 g of sugar and 5 g of citric acid.

Bring the drink to a boil; if foam forms, be sure to remove it. Add citric acid and sugar, then strain through cheesecloth and pour into sterilized jars. Seat tightly. The jars should be kept upside down until they cool down.

Canned nectar can be stored for up to 2 years.

Another option is to make syrup, but this method is not the easiest.

Pour some of the juice into an enamel pan and boil. When about 1/3 of the volume has evaporated, add more. Continue this until the volume of all liquid is reduced by 10 times. During the boiling process, do not forget to skim off the foam. The larger the area, the faster the liquid evaporates, so it is better to use wide containers.

As a result, you will get a thick, yellow liquid, similar in color and consistency to honey, in which all the beneficial substances are concentrated. The syrup has a very pleasant taste; before use, it can be diluted with water, added to tea and simply eaten.

This concentrate practically does not lose its properties and does not ferment, so it can be stored for two years.

The composition of birch “sam” is represented by the following ingredients:

  • Birch sap (15 l).
  • Granulated sugar (3 kg).
  • Yeast. For 15 liters you need to take 100 g.

Currant and cherry leaves will also be useful to you. Birch sap is heated in an enamel pan, seasoned with sugar, yeast, leaves and mixed well. Then the container should be covered and left to ferment in a warm place for one week. At the end, the fermented liquid is filtered into a new container and sent for distillation.

Preserve the juice for as long as possible without preserving it

The previously presented methods involved long-term storage of the “harvest” collected from birch, and all the beneficial properties remained unchanged. But this product can be used to prepare other drinks, the benefits of which will be no less than those of pure birch sap. Thanks to them, the body is saturated with useful components. Particularly pleasing is the long shelf life.

Morse is the simplest drink that can be obtained using birch sap. It is very simple to prepare, and the amount of ingredients required is minimal.
